Instructions

Step 1
Chop vegetables and combine with some oil, 1 1/2 TBLS curry powder, Costco garlic seasoning, 1/2 the turmeric, pepper. Toss vegetables and add to cookie sheet. Cook for 35-45 mins. Add vegetables to blender with coconut milk, red curry paste, broth, sugar and remaining soup ingredients For roti combine all dry ingredients and mix then slowly add warm water and knead for 2 mins. It will be sticky. Put in a different bowl with some oil and cover for 20 mins. Put in 10 small portions. Leave 10 mins to rise. Roll out flat add oil/ butter combo all over the dough. Cut one side and roll in a circle, press down. Leave for 10 mins covered. Roll out on flour surface till thin. Brush with butter/oil then add to hot pan. Add butter/oil to both sides. Cook till golden brown on each side.
