Instructions
Step 1
Heat olive oil in a deep pan. Add shallots, cook 3 mins until soft.
Step 2
Add garlic + red pepper flakes. Sauté 1–2 mins.
Step 3
Pour in wine, let simmer for 2–3 mins.
Step 4
Add tomatoes. Simmer 5–7 mins to let it all meld.
Step 5
Toss in mussels. Cover and cook 5–7 mins, shaking pan occasionally, until mussels open.
Step 6
Discard any mussels that don’t open. Season broth to taste.
Step 7
Sprinkle with fresh herbs and a squeeze of lemon. Serve with crusty bread or roasted potato wedges.
