Stuffed Mini Peppers

Made these yummy stuffed mini peppers to go with a marinated top sirloin last night and arugula salad. They were delicious.
Stuffed with:
Cottage cheese (blend for creamier texture)
1 small or 1/2 large shallot
4 cloves of garlic
1 c spinach, chopped
Fresh basil and parsley
S, P, & oregano seasoning
Sauté shallots, garlic, and spinach with dried spices
Mix with cottage cheese and fresh herbs, then add additional seasonings to taste
Fill peppers and bake at 375 for 20-30 minutes depending on your oven and taste
