2baby bok choi
quartered

225 gramschestnut mushrooms

2 Tbspolive oil

2 tspfresh ginger

2 clovesgarlic
grated

2 cupsveg broth

2 Tbspdark soy sauce

1 Tbspsriracha

Spring onion
for garnish

sesame seeds
for garnish

Instructions
Step 1
Add cod marinade ingredients together and cook on low heat for several minutes until sugar has dissolved. Then let it cool. Cover fish with marinade and marinate for 12-24 hours
Step 2
Remove excess marinade off fish then cook at 350F for 7 minutes then move to highest rack and cook on high for 5 more minutes
Step 3
Heat up olive oil in a pan and saute mushrooms for 10 mins, add ginger and garlic and saute for 2 more minutes, then remove from pan
Step 4
Add book choi and sear then add stock, soy sauce and sriracha and bring to simmer then add mushrooms back in.
Step 5
Serve with rice and garnish with spring onion and sesame seeds
