½ Tbspcornflour
1 ½ Tbsptomato puree
1 tspsoy sauce
½ Tbspcoconut oil
450gdiced chicken
4shallots
3garlic cloves
minced
0.5 inchfresh ginger
minced
75mlpineapple juice
0.5orange pepper
0.5yellow pepper
0.5red pepper
1pak choi
80gmangetout
100gpineapple chunks
2spring onions
finely sliced
1 Tbspsesame seeds
for garnish
200gcauliflower rice
to serve
Instructions
Step 1
Mix the cornflour, soy sauce and tomato puree until well combined.
Step 2
Heat the oil and add the chicken, fry until golden brown
Step 3
Add the shallots, garlic and ginger and cook until softened
Step 4
Add the cornflour, soy and tomato mixture and coat the chicken well
Step 5
Add the pineapple chunks, juice and vegetables and simmer on reduced heat for 5-8mins or until cooked to liking
Step 6
Serve with cauliflower rice and/or side of steamed greens
