Step 1
Heat oven to 350 degrees. Coat 3 quart baking dish with cooking spray. In a large pot of boiling water, cook pasta per package directions for Al dente, adding broccoli for the last 2 minutes of cooking time. In a bowl mix together the eggs and half and half. Add pasta mixture, tuna, spinach, scallions, garlic, salt and pepper. Transfer to baking dish & sprinkle with Parmesan cheese. Bake until bubbly, 30-35 minutes. Top with arugula.
