Instructions
Step 1
Get a pan very hot
Melt butter, and pour in hashbrowns. Do not touch for a few solid minutes to allow bottoms to brown. Flip and repeat. Continue until all potatoes are nice and crispy. Season with salt and pepper as you go.
Step 2
In another pan, brown sausage. Sautee onion with it.
Step 3
Combine potato mixture and sausage mixture.
Step 4
In a bowl, whisk eggs and milk together.
Step 5
Combine egg mixture to potato/ sausage mixture and stir until eggs are cooked.
Step 6
Serve on tortillas with salsa, cheese, etc!
Step 7
Optional: add other veggies like bell peppers or spinach. Use a different kind of potato for different textures. Experiment with seasonings.
