Ingredients
6 servings
1 poundground turkey
1red onion
medium, chopped
5garlic cloves
minced
1red bell pepper
chopped
1 cupfrozen sweet corn
organic
10 ozbutternut squash
diced
1 tablespoonchili powder
1 teaspooncacao powder
1 teaspoonground cumin
½ teaspooncayenne pepper
½ teaspoonground cinnamon
½ teaspoonsea salt
1 x 28 ouncecan of diced tomatoes
including the liquid
1can black beans
rinsed and drained well
2 cupsvegetable broth
1 tablespoonapple cider vinegar
full fat plain yoghurt
for serving
Instructions
Step 1
In a 4 to 6 quart stockpot, cook the turkey over medium heat, breaking up chunks as it browns, about 5 minutes.
Step 2
Push the turkey to the edges of the pan and add the onion and garlic to the center. Cook until the vegetables start to soften, about 3 minutes, and add the peppers, corn and squash. Sauté for another 3-5 minutes.
Step 3
Add the remaining ingredients. Cover and cook on low for ten minutes, stirring occasionally
Step 4
4. Serve with a dollop of full-fat plain yogurt, sliced green onions, sliced radishes, or cilantro
