Instructions
Step 1
Combine the last 4 ingredients and set aside
Step 2
Place 2 tbsp olive oil in pan on med heat
Step 3
Take frozen shrimp that should by now be thawed prior to cooking and drain the excess water and saute in pan about 1 min
Step 4
Add red pepper, quinoa, and spinach and cook till the shrimp start to turn pink and spinach starts to wild.
Step 5
Add vinaigrette to the pan and stir about 2 min
