Instructions
Step 1
drain the tvarog by wrapping it in cheesecloth and letting it sit in a sieve or hang for 30–60 minutes to remove excess moisture.
Step 2
press the tvarog/farmer’s cheese through a fine mesh sieve for an ultra-smooth texture
Step 3
in a large bowl, whisk together the eggs, sugar, vanilla, and salt until smooth.
Step 4
fold in the sieved tvarog until fully combined.
Step 5
sift in the flour and cornstarch, then mix until just combined.
Step 6
fold in the cold chocolate chips. batter should be soft, slightly sticky, but scoopable.
Step 7
heat a nonstick skillet over low-medium heat.
Step 8
fry syrniki in batches, about 3-4 minutes per side, until deep golden.
Step 9
serve while warm with some sour cream and jam/fruit preserves. enjoy!
