Ingredients
4 servings

¾ cupdried butter beans

3 cupsbeef broth

1onion
large, sliced

½ cupmushrooms
sliced, button or white

4 clovesgarlic
minced

1 tablespoonavocado oil

salt
to taste

pepper
to taste

3 tablespoonsmiso paste

½ cuplentils
cooked

1 cupkale
chopped

1bay leaf

2 tablespoonsbutter

2 tablespoonsflour

gruyere
shredding for topping

parmesan
grated for topping
Instructions
Instant Pot
Step 1
Rinse beans, add to instant pot, add broth, bay leaf, and salt
Step 2
Pressure cook high
Unsoaked - 35 to 40 mins
Soaked - 15 to 20 mins
Step 3
Let natural release for 10 minutes
Separate beans and broth (don't toss broth!)
French Onion Base
Step 4
Heat avocado oil in large pan. Add sliced onion and mushrooms. Saute on medium low heat for approx 15 mins. Until onions are caramelized.
Step 5
Add minced garlic and cook for 1 more minute
Put It Together
Step 6
Add butter, let melt. Add flour and stir to make a roux
Step 7
Add about 1 cup of broth and kale. Bring to a simmer. Add more broth if needed
Step 8
Add miso paste, lentils, and beans. Simmer for 5 mins
Step 9
Add salt and pepper to taste
