Ingredients

1 headcauliflower
small, chopped into florets

⅓ cupcoconut aminos
soy-free alternative to soy sauce

¼ cuppure maple syrup

1 tablespoonminced garlic
omit if sensitive

1 ½ teaspoonstoasted sesame oil

½ teaspoonground ginger

1 ½ tablespoonsarrowroot powder

¼ cupwater

Sesame seeds

green onion tops
chopped, green parts only, for garnish
Instructions
Step 1
Step 1: Preheat your oven to 450°F (232°C). Line a baking sheet with parchment paper or lightly grease it.

Step 2: Cut the cauliflower into florets, ensuring one side of each floret is flat for better roasting. Arrange them in a single layer on the prepared baking sheet.

Step 3: Bake the cauliflower for 10 minutes on the center rack.

Step 4: While the cauliflower is baking, prepare the sauce. In a saucepan, whisk together the coconut aminos, maple syrup, minced garlic (if using), toasted sesame oil, and ground ginger. Bring the mixture to a boil over medium heat.

Step 5: In a separate small bowl, mix the arrowroot powder with water until fully dissolved. Once the sauce reaches a boil, slowly whisk in the arrowroot mixture. Reduce the heat to medium and cook for 2 minutes, stirring frequently, until the sauce thickens. Remove from heat.

Step 6: After the initial 10 minutes of baking, flip the cauliflower florets and bake for an additional 10 minutes.

Step 7: Once the cauliflower is done baking, transfer it to a large bowl. Pour the prepared sauce over the cauliflower and toss gently to coat evenly.
