Based on a recipe for tiramisu I found on the side of a package of ladyfingers; homemade ladyfingers are highly recommended.

Instructions

Step 1
Crack open eggs and separate the yolks from the whites. Place yolks in a large mixing bowl.

Beat the yolks with the sugar until the mixture is pale yellow and thick.

Add in the mascarpone and gently mix until stiff.

In a separate mixing bowl, add in the egg whites and a pinch of salt. Beat with a clean mixer until stiff peaks.

Gently fold in about a quarter of the egg white mixture into the mascarpone mixture. Once incorporated, gently fold in the mascarpone mixture into the egg whites until there are no streaks. Do not overmix!

Prepare the coffee and pour it in a shallow bowl or dish. Traditionally, cooled espresso would be used with a bit of amaretto, but any strong coffee by itself is fine.

Dip the ladyfingers into the coffee for no more than 3 seconds and arrange them into casserole dish. Continue until the layer is covered in lady fingers.

Cover the ladyfingers with the mascarpone mixture. Repeat from step 7 until there are no more ladyfingers and the last layer is the mascarpone.
Step 9
Dust the top with cocoa powder and refrigerate for 4 hours or overnight. Serve cold.
