Instructions

Step 1
Start by making your rice i use jasmine rice but you could use white rice or even Spanish rice for more flavor. I do 1.5 cups of water and 1 chicken bullion cube and bring to a boil. Once boiling add 1 cup of rice. If using Spanish rice make to package instructions.
Step 2
While the rice is cooking I dice my 2 peppers and half an onion
Step 3
To a skillet pan add oil and ground turkey or beef your choice.
Step 4
Once cooked add seasoning and then add the pepper onion and garlic into your skillet. Cook until onions are translucent and peppers start to soften.
Step 5
Add in your tomato. I use 1 can of diced tomatoes but you could do 1 or 2 fresh tomatoes. You could also use a can of rotel
Step 6
Mix everything together and then add your cooked rice. Add more seasonings as needed
Step 7
Top with cheese, salsa, sour cream, avocado or whatever you like and enjoy
