Step 1
Bring a pan to medium heat with a little dash of olive oil, fry the onion and capsicum for 3 minutes then add the shredded tofu and all the spices and a pinch of salt and sauté for another 4 - 5 minutes then set aside
Step 2
Bring pan to medium/high heat again with another little dash of olive oil and fry the corn and zucchini with a good pinch of salt and pepper until golden brown
Step 3
Mix together the coconut yogurt and chipotle sauce to make a chipotle mayo inspired sauce/dressing
Step 4
Assemble your bowl with everything you cooked, the rice and all the fresh veg and enjoy! 🤌
