Ingredients
4 servings
2 cupsrice
cooked, or other grain such as quinoa, barley, brown rice or even lentils if you like
2 cupscorn
1can black bean
drained and rinsed
1 tblsolive oil
¼ tspsalt
½ tspchili powder
¼ tsppaprika
¼ tspcumin
1avocado
1 cupcherry tomatoes
halved
2green onions
sliced
1 cupshredded cheddar
1 cupsour cream
1 cupsalsa
lime
cilantro
Instructions
Step 1
Warm the rice by plunging it for 2-3 minutes in a pot of boiling water, then drain.
Step 2
In a non-stick skillet, warm the black beans and season with olive oil, chili powder, cumin, paprika and salt.
Step 3
When Rice is cooked place 1 cup in each serving bowl and top as desired with remaining ingredients
Step 4
Serve burrito bowls with a squeeze of fresh lime
