Instructions

Step 1
Bring a pot of salted water to a boil. Add the chickpea pasta and cook according to package instructions (usually 7–9 minutes) until al dente. Reserve about ½ cup of pasta water, then drain.
Step 2
In a large skillet over medium heat, cook the chopped bacon until crispy and the fat is rendered (about 5–7 minutes). Remove from heat.
Step 3
In a bowl, whisk together 2 whole eggs, 2 yolks, and the grated cheese until smooth. Add a generous amount of freshly ground black pepper.
Step 4
Return the hot drained pasta to the skillet with the bacon (off the heat to avoid scrambling the eggs). Quickly pour in the egg-cheese mixture, stirring continuously to create a creamy sauce. If too thick, add a splash of reserved pasta water to loosen it.
Step 5
Taste and adjust with pepper or a touch more cheese if needed. Serve immediately.
