Instructions
Step 1
Prepare Jackfruit: If using canned or brined jackfruit, rinse thoroughly and drain. Use your hands or a fork to shred the jackfruit into stringy pieces, removing any seeds and tough parts.
Step 2
Buttermilk Marinade: In a bowl, combine the coconut or soy milk (preferred) with vinegar or lime juice, then add remaining ingredients. Add the shredded jackfruit and let it marinate for 15-30 minutes (if time allows). Drain before proceeding only if a lot of excess water.
Step 3
Make the Batter: In a large mixing bowl, combine all the dry ingredients. Then add the wet ingredients. Stir until the batter is thick and sticky, adding more liquid if needed to achieve the right consistency.
Step 4
Coat the Jackfruit: Add the buttermilk-marinated shredded jackfruit to the batter and mix until well-coated. Let it sit for 10-15 minutes to allow the flavors to meld. Shape into 6 patties
Step 5
Crispy Coating: Dredge the jackfruit patties in the coating. Ensure each piece is well-coated, and coat again a second time.
Step 6
Steam: Wrap in baking paper, then foil. 2 in 1 packet is fine; however, leave room for steam to escape by not closing the foil completely
Steam 10 mins. Remove foil packet ASAP.
Sit at room temp until cool enough, then seal and store in the fridge 1 month or 3 months freezer.
Step 7
Fry: Heat a shallow layer of oil in a pan over medium-high heat. Fry the coated jackfruit in batches, pressing it down slightly with a spatula to create a crispy crust. Fry each side for about 3-5 minutes or until golden and crispy.
Step 8
Assemble: Place the crispy jackfruit patties on vegan burger buns and top with lettuce, sliced tomatoes, vegan mayo, and cucumber pickles (or your favorite toppings).
