Ingredients
4 servings
3 Tbssoy sauce
gluten free tamari, or coconut aminos
¼ cupfresh orange juice
¼ tspSriracha hot sauce
2 tspoil
neutral-tasting, canola, grapeseed, or sunflower
2cloves garlic
minced
2carrots
peeled, halved, and thinly sliced
1 cupmushrooms
button, cremini, or shitake
1 cuppineapple
fresh or thawed
2 ½ cupsbroccoli florets
peeled, chopped stems
2 cupsquinoa

Instructions
Step 1
1. In a small bowl, combine soy sauce or tamari or coconut aminos, orange juice, and Sriracha. Set aside.
Step 2
In a large skillet, heat oil over medium-high heat.
Step 3
Add garlic, carrots, and mushrooms. Cook, stirring, for 2 minutes.
Step 4
Add pineapple and broccoli. Cook for another 2 minutes, or until broccoli is bright green.
Step 5
Add sauce to the mixture in the skillet and combine.
Step 6
Add quinoa and cook until the mixture is warmed through. Serve immediately.
