Instructions
Step 1
Boil beets for about 50 minutes or until soft.
Step 2
Rinse beets with cold water and let sit for a few minutes in cold water. This will help skin peel clean off.
Step 3
While beets are cooling, add in a bowl sliced cucumber, arugula, chopped dill, and parsley.
Step 4
Peel beets by submerging in water and sliding the skin off gently. Then slice and dice to size you'd like.
Step 5
For dressing, add olive oil, balsamic and white wine vinegar, crushed garlic, salt and pepper. Taste to test and adjust as needed for flavor.
Step 6
You can add other ingredients like feta cheese, chia seeds, or other salads if you'd like.
