Instructions
Step 1
Boil either frozen or fresh broccoli until soft in a pot.



Step 2
Chop the onion, thyme and mince/crush the garlic




Step 3
In a pot, pour some olive oil and fry the onion until translucent followed by about 1/3rd of the garlic. Add the boiled and strained broccoli. Pour enough water to cover about 2/3rds of the veggies. Add the potatoes, salt, pepper, boouilln, nutmeg and the chopped thyme.
Step 4
In another small pan, pour oil and take the rest of the minced garlic and fry that until golden brown and fragrant.
Step 5
When the potatoes are soft, use a blender and blend everything until smooth. Add the cream to give volume and thicken the soup. Then, pour the fried garlic and its oil into the soup and mix.
