Instructions
Step 1
Fry chicken in pan on each side 3 mins each on caramelize, then turn heat down to cook for 10 mins on low.
Step 2
Remove chicken to plate, then add rice to pan to toast until golden brown, then add in onions and peppers to saute for a minute.
Step 3
Add tomato sauce and let simmer for a moment, season with chili powder, cumin, then pour in stock.
Step 4
Place chicken back in pan with juices from the plate, and then add the peas. Bring to boil and let simmer for 2 minutes. Turn heat to low, and cover for 20mins.
Step 5
Turn heat off and let sit covered for ten minutes.
Step 6
Serve and top with olives.
