3 cupswhite rice
cooked, preferably day-old

½ cuphickory-smoked ham
shaved, or regular ham, chopped

0.5 poundground beef
seasoned

1 tablespoonfresh ginger
minced

2cloves garlic
minced

1 cupcabbage
thinly sliced

½ cupfrozen peas

½ cupcarrots
diced

2 tablespoonssoy sauce
1 tablespoongarlic chili crisp
or chili oil with garlic

2eggs
fried, for topping

Oil
for cooking, vegetable or canola

salt
to taste

pepper

green onions

1 cupbeef stock

1 tablespoonsoy sauce

1 teaspoonworcestershire sauce

1 tablespoonketchup

1 tablespooncornstarch
mixed with 2 tablespoons water

Step 1

In a small saucepan, combine beef stock, soy sauce, Worcestershire sauce, and ketchup.

Bring to a simmer over medium heat.

Stir in the cornstarch slurry (cornstarch mixed with water) and whisk until the gravy thickens.

Add sautéed mushrooms and onions if desired. Keep warm.

Fried Rice

Heat a large wok or skillet over medium-high heat and add a little oil.

Add the seasoned ground beef and cook until browned, breaking it up as it cooks.

Add the shaved ham and cook until lightly browned. Remove beef and ham from the pan and set aside.

In the same pan, add a bit more oil if needed. Sauté minced ginger and garlic until fragrant (about 30 seconds).

Add the sliced cabbage, peas, and diced carrots. Stir-fry for 2-3 minutes until vegetables are tender but still crisp.

Add the cooked rice to the pan. Stir-fry, breaking up any clumps, and mix well with the vegetables.

Return the cooked beef and ham to the pan. Drizzle soy sauce and garlic chili crisp over the rice mixture.

Stir everything together and cook for another 2 minutes until heated through. Season with salt and pepper to taste.

In a separate pan, fry the eggs sunny-side up or to your preference.

Serve the fried rice on plates, topping each with a fried egg.

If using, spoon the warm brown gravy over the rice and egg.
