Ruth’s mango chicke
For ten people:
2kg chicken
54g Schwartz medium curry powder
1.5 clove garlic
1/2 TBS crushed ginger
670g mango chutney
1 tin coconut milk
Cornflour to thicken at the end.
Brown chicken in oil, add curry, garlic, ginger fry 2-3 mins. Add mango and coconut milk add to oven proof dish and cook till chicken cooked through add cornflour to thicken sauce.
