Step 1
1. Slice eggplants into ¼-inch rounds. Lay on paper towels, sprinkle with salt, and let sit for 1 hour to draw out moisture. 2. Preheat oven to 400°F. Lightly oil a baking tray. 3. Prepare three bowls for breading:
a. Flour, salt, and pepper
b. Beaten eggs
c. Breadcrumbs mixed with garlic powder 4. Dip eggplant slices in flour, then egg, then breadcrumbs. Place on the baking tray, sprinkle with Parmesan, and bake for 20 minutes, flipping halfway through. 5. While baking, chop fresh basil and mozzarella. 6. In a baking dish, spread 2 tablespoons of marinara sauce. Layer as follows:
Eggplant → Marinara → Mozzarella → Basil → Repeat → Top with Parmesan. 7. Bake for 20–25 minutes until bubbly and golden.
