Instructions

Step 1
Bring a medium (4-quart) pot of water to a boil over high heat.
Step 2
Add a pinch of salt, if you like, and cook the pasta al dente according to the directions on the package.
Step 3
Drain, then transfer it to a large bowl, toss with 1 teaspoon of the oil and let cool completely.
Step 4
In a small bowl, whisk together the remaining 2 tablespoons plus 2 teaspoons of olive oil, the vinegar, oregano, basil, garlic, 1/2 teaspoon of salt and the black pepper until well combined.
Step 5
Add the bell pepper, tomatoes, broccoli, mozzarella and the dressing to the pasta, and toss to combine.
Step 6
Serve right away, or refrigerate until needed.
