Instructions
Step 1
Cook the basmati rice by steaming until tender and fluffy, then set aside.
Step 2
Clean the spinach and boil in salted water until soft, then drain well and keep aside.
Step 3
Cut the salmon into cubes and steam gently until just cooked through.
Step 4
Warm the coconut milk in a pan and when it starts to simmer, lower the heat and add the green curry paste, stirring until combined.
Step 5
Serve the rice with spinach, place the salmon on top, and finish with the green curry sauce and a sprinkle of poppy seeds.
