Instructions

Step 1
Warm up the sweet onion: Turn the oven on to 400°F, or 200°C. After peeling and chopping the sweet onion, roast it for 20 minutes until it caramelises. Drizzle it with olive oil. Let cool slightly before blending.
Step 2
To make the dressing: Put the roasted onion, dijon mustard, apple cider vinegar, honey, garlic powder, salt, and pepper in a blender. Blend until it's smooth. If necessary, change the seasoning.
Step 3
To assemble the salad: Place mixed greens in a big bowl. Arrange the chicken, bacon, avocado, cherry tomatoes, red onion, blue cheese, and hard-boiled eggs in neat rows. Pour the roasted sweet onion dressing over the dish liberally.
Step 4
Serve and Savour! Keep ingredients piled for presentation, or toss lightly before serving.
