Instructions

Step 1
Chop chicken breasts into bite-sized pieces and season with salt, pepper, and garlic powder.
Step 2
Heat olive oil in a large, deep skillet over medium-high heat until shimmering.

Add the chicken to the skillet and cook, stirring often, until nearly cooked through and browned.

Stir in the rice, chopped carrots, and minced garlic. Add chicken stock and bring to a boil.

Reduce heat to a simmer, cover, and cook for 10 minutes.
Step 6
Remove the lid, stir well, and add the chopped broccoli. Cover and cook for another 10 minutes or until the liquid is absorbed and rice is tender.
Step 7
Remove from heat, sprinkle cheddar cheese on top, and cover for 5 minutes to melt the cheese before serving.
