Sheriff Don's Magic Mushrooms

There are so many delicious variations for this delectable side dish that it seems redundant to add another. On the other hand, it's my personal opinion that there is nothing less appealing than a re-heated stuffed mushroom, so this is my favorite go-to recipe when I don't want to be bothered with leftovers. That's why I call them 'magic mushrooms'... because they always dissappear, regardless of the number of dinner guests!

Ingredients
4 servings

1 lbsmushrooms
trimmed, keep stems

8 ozcream cheese
softened

1 stalkcelery
small, finely diced

1 stemgreen onion
finely diced

1 tsppimento
pickled, finely diced

1 tspfresh parsley
finely chopped

3 clovesfresh garlic
finely diced

⅓ cuppecans
finely chopped

⅓ cuppanko
italian seasoned

1 Tbsbacon bits
more to taste

1 tspblack pepper
coarse ground

½ tspblack truffle salt

1 pinchcayenne pepper
optional

1 Tbsparmesan cheese
grated, optional for topping
Instructions
Step 1
Preheat oven 350°F
Step 2
Pre-prep: wash and trim mushrooms, then finely chop mushroom stems along with all vegetables.
Step 3
In a small mixing bowl, add all ingredients, except parmesan cheese, and mix together until blended thoroughly.
Step 4
Load each mushroom canopy with a generous portion of mixture (approximately 1+ Tbs), sprinkle with parmesan, and place on a large baking sheet lined with parchment paper. Be sure to leave space between each mushroom.
Step 5
Place in oven and bake for 20-25 minutes or until parmesan is toasted. Remove from oven and garnish with parsley.
