Instructions

Step 1
Cook the tagliatelle in well-salted boiling water according to packet instructions. Reserve a small cup of pasta water, then drain.
Step 2
While the pasta cooks, melt the butter in a frying pan over medium-low heat. Add the garlic and chilli flakes. Sauté gently for 1–2 minutes to infuse the butter — don’t let the garlic brown.
Step 3
Add the king prawns and cook for 1–2 minutes per side, until pink and just cooked through.
Step 4
Add a splash of white wine or cider, and let it simmer for 30 seconds to reduce slightly.
Step 5
Stir in the gochujang and mix well. Keep the heat low and let it cook gently for 1–2 minutes, allowing the flavours to meld.
Step 6
Add the double cream and Parmesan, stirring until melted and combined. Season with salt and pepper to taste.
Step 7
Add the drained tagliatelle straight into the pan. Toss to coat, adding a splash of reserved pasta water if needed to loosen the sauce.
Step 8
Serve immediately, topped with extra Parmesan or a few chilli flakes if desired.
