Instructions

Step 1
Combine ingredients for the stir-fry sauce and set aside.
Step 2
Optionally (instead of egg) marinated tofu: 200g tofu, sliced into thin strips, marinated in 1 tbsp soy sauce and garlic. Fry that off in a pan and set aside.
Step 3
Heat a little oil in a wok over high heat. Stir in the garlic, followed by your greens of choice. Stir-fry until tender. Now add the noodles to the wok and spread them around. Pour the sauce mixture over, gently mixing to coat everything evenly.
Step 4
If using, return the tofu to the wok and push everything to one side. Now pour in the beaten eggs, scrambling it into small pieces. Toss everything together gently and cook until slightly browned and caramelized. Serve immediately with fresh scallion greens and enjoy!
