Instructions
Step 1
In a large pot, heat the olive oil over medium heat. Add the chopped onion and cook for 5 minutes until soft.
Step 2
Add courgettes, asparagus, and dried tomatoes. Stir for a couple of minutes to coat the vegetables in the oil.
Step 3
Add the water and salt. Bring to a boil, then reduce the heat and simmer for 25–30 minutes, until all vegetables are soft.
Step 4
Blend the soup until smooth.
Step 5
Adjust salt or water to taste. Serve warm.
