Seth's Cold Soba Noodles

Simple Soba noodle salad. I added carrots, bell pepper, spring mix and cucumber salad for garnish. The noodles are good on their own if you want to skip it.

Instructions

Step 1
Cook Soba noodles according to package instructions then shock in cold water and let drain.
Step 2
Combine the garlic, ginger, scallions, chili flakes, both oils and 3 Tbsp rice vinegar together in a bowl and gently mix it all together.
Step 3
Pour the mixture over the cold drained soba noodles. Mix thoroughly then cover and let sit in the refrigerator for at least 30 minutes.
Step 4
In this part you are pretty much making a cucumber salad. Cut the cucumber into circles then rub them gently with the salt and let sit for 5 minutes.
Step 5
Rinse off the salt and drain the cucumbers. Pat them dry and transfer to a bowl. Add remaining Tamari, rice vinegar, sugar, and 1 tsp of the white sesame seeds . Let sit for 20 minutes.
Step 6
Toast off the rest of the black and white sesame seeds in a hot dry skillet while waiting for noodles and cucumbers to marinate.
Step 7
Split the cold Soba noodles between two bowls and garnish to your liking with the red peppers, carrots and cucumbers Then sprinkle with the toasted seeds.
Step 8
I add whatever greens I have on hand for additional garnish but it isn't necessary.
