Instructions

Step 1
Season the pork shoulder butt with smoked paprika, salt, and pepper.
Step 2
Place the seasoned pork shoulder in the slow cooker. Cover meat with water or broth.
Step 3
Cook on low for 8-10 hours or high for 4-6 hours, until the pork is tender and easily shreds with a fork.
Step 4
After 6-8 hours, remove the pork from the slow cooker and shred it with two forks.
Step 5
Return the shredded pork to the slow cooker and toss it with sugar-free BBQ sauce, peppers, and onions.
Step 6
Cook for an additional 30 minutes to 1 hour on low, allowing the pork to absorb the BBQ sauce.
