Easy Butter Chicken

Ingredients
2 servings

1 lbchicken thighs
trimmed and cubed

1 ½ cupsbaby carrots
chopped
0.5can butter chicken simmer sauce

½ cupwhite rice
uncooked

vegetable broth

garam masala

ground coriander

salt
Instructions
Step 1
Start by cooking the rice according to package instructions. Meanwhile, chop the chicken and carrots.



Step 2
In a pan on medium heat, pour in vegetable broth enough so it just covers the bottom of the pan. Place the chopped carrots into the pan until all of the broth has been absorbed, about 10 minutes.


Step 3
In a separate pan, place the cubed chicken thighs. Season with garam marsala, ground coriander, and salt. Cook until the chicken is browned.




Step 4
Once the chicken is browned, pour in the butter chicken sauce. Let the sauce simmer for about 5-7 minutes.
Step 5
Once done, mix the chopped carrots in to the chicken mixture. Serve over a serving of the white rice and enjoy!
