1kgBoneless skinless chicken thighs

200gbacon

50gbutter

1leek

2carrots

2stalks celery

8 clovesgarlic

400gmushrooms

½ cupmixed fresh herbs
thyme, rosemary, sage, marjoram

1 ½ tablespoonsdijon

1zest of lemon

2dried bay leaves

½ tspground pepper

200 gmcreme fraiche
or 1 cup cream mixed with 1 top of cornflour

½ cupparsley
chopped
Instructions
Step 1
Preheat oven to 180 degrees C.
Step 2
Sprinkle salt and pepper over chicken.
Step 3
Fry bacon till crisp. Add to casserole dish. Brown chicken and add to dish. Cook veg in butter for 10 minutes to soften. Add all other ingredients and stir through chicken and bacon.
Step 4
Cover with lid. Bake for 1 hour.
