Ingredients

300gorzo

0.5Cucumber
Cut into 1cm cubes

200gCherry tomatoes
Cut into 1cm cubes

200gFeta
Cut into 1cm cubes

30gmint
finely chopped

2 Tbspolive oil

4 Tbspbalsamic vinegar

1Red onion
Peeled and chopped into 1cm pieces

80gBlack olives
Pitted and cut into 1cm cubes

1 x 400gChickpeas tin
drained and rinsed

sea salt

freshly ground black pepper
Instructions
Step 1
Boil your orzo for about 5 minutes or according to the pack instructions.
Step 2
Meanwhile, chop all of your fresh ingredients.
Step 3
Once the orzo is cooked, drain and rinse it in very cold water.
Step 4
Mix the orzo with the vegetables, add the vinegar and oil and mix well.
