Instructions

Step 1
Cook 1 pack sweet potato noodles in boiling water for about 7 minutes. Immediately drain and rinse thoroughly in cold water.
Step 2
Soak 10 dried mushrooms in cold water for about 1 hour. Squeeze the liquid from the mushrooms and slice. Heat vegetable oil in a skillet. Add the mushrooms, 1 lb sliced rib eye, 2 cloves minced garlic, 1 tbsp soy sauce, 1 tsp sesame oil and 1 tsp sesame seeds, and sauté until beef is cooked.
Step 3
Heat vegetable oil in a skillet. Add 2 medium sliced onions, 2 shredded carrots, 1 small sliced green pepper and 1 tsp salt, and sauté for about 3-4 minutes.
Step 4
In a large bowl, thoroughly combine noodles, beef mixture, onion mixture, 1/2 cup soy sauce, 2 tbsp sesame oil, and 1/2 cup sugar.
Step 5
Serve warm, sprinkled with whole sesame seeds if desired.
