Instructions
Step 1
Heat braising pan with oil and brown pork cubes. Brown in batches if necessary and remove from pan. Deglaze pan before next step if fond is close to burning and reserve juices. Preheat oven to 285°F.
Step 2
Add oil to pan and saute onions and chilies. Add garlic after a few minutes. Add all spices except tyme. Add 1 tbsp flour. Add apple juice, stock, and apple cider vinegar after fond develops. Scrape fond from bottom.
Step 3
Bring to a boil and adjust for salt, keeping in mind it will greatly reduce during cooking. Add pork back into pan, making sure it's in a single layer about 3/4 covered by liquid.
Step 4
Put pan in oven with lid OFF and cook for 1.5-2 hours or until fork tender.
Step 5
Mix pork with juices and let rest 20 mins.
Step 6
Remove pork. Reduce juices until desired salt level, thicken with starch slurry if necessary. Add pork back in and mix.
