Instructions

Step 1
Preheat the oven to 350F / 176c. Prep the broth with bouillon cube and hot water. Make the cream of mushroom soup by heating up some olive oil, the onion powder, and pepper in a deep saucepan or medium sized pot. Stir in flour and cook 1-2 min. Add the broth, bring to a simmer and add the oat milk. Add the diced mushrooms too (dethawed and drained first if frozen). Simmer on heat 3, or medium heat, depending on stovetop, for 12 min.
Step 2
As the cream of mushroom soup cooks, make the french fried onions. Thinly slice 1 onion with a mandolin or by hand with a sharp knife. Preheat the air fryer for 2 min. Toss sliced onion in 2 Tbsp avocado oil. Once preheated, air fry the onions for 4 min, stir, air fry 4 more min. Time may vary - you want to air fry until deep golden brown, not burnt!
Step 3
Once soup and onions are done, assemble the casserole. Get a casserole dish with a lid and spray it with olive oil. To the soup pot, add 1/2 cup oat milk, 1 tsp soy sauce, and mix. Next, add the drained cans or jars of green beans and mix. Add 3/4 of the air fried crispy onions, reserving some for later. Mix well. Pour the casserole filling into the sprayed casserole dish and put a lid on it. Bake at 350F / 176c covered for 25 min.
Step 4
Remove from oven and remove lid. Top the cooked casserole with the remaining 1/4 of the air fried onions. Put back into the oven and bake 5 more min. uncovered so the casserole browns. Remove from oven and enjoy!
Step 5
I use a round 2 quart ceramic casserole dish with a lid for this recipe. If you don't have that, I'm sure a square 8"x8" glass dish with aluminum foil would work too.
Step 6
This recipe makes 4 servings. If you want more, you can double it in a 9"x13" glass dish and use aluminum foil to cover it. Doubled makes 8 servings.
