Step 1
Mix the dry ingredients.
Either stir or whisk in the eggs and milk to make a smooth batter. Add a little more milk, if the batter is too thick.
Brush a hot frying pan with oil, and add a couple of spoons of batter to the pan. Fry the pancakes on a medium heat until bubbles rise to the top and the batter starts to skin over slightly. Carefully flip the pancakes and cook for another 3 minutes.
Remove and either keep warm while you cook the remaining batter, or serve immediately with your favourite topping(s)
They can be eaten hot or cold.
