For the Beef Crumble Mixture

640g96% lean ground beef

Instructions
Beef Crumble Mixture
Step 1
In a blender, blend cottage cheese until smooth.
Step 2
Into a large mixing bowl, add ground beef, blended cottage cheese, egg whites, vital wheat gluten, egg yolks, Dijon, garlic, parsley, paprika, salt, and pepper. Mix gently until combined.
Step 3
Heat a large nonstick skillet over medium-high. Add beef mixture and cook, breaking up with a spatula, until fully browned and crumbly with no pink remaining—about 6–8 minutes. Transfer to a bowl and let cool.
Sautéed Mushrooms and Spinach
Step 4
Wipe out skillet and return to medium-high heat. Add a light spray of oil and the mushrooms. Sauté until golden and most liquid evaporates, 5–6 minutes. Season with a pinch of salt.
Step 5
Add spinach to the pan and cook, stirring, until just wilted (1–2 minutes). Remove from heat and cool.
Cheesy Herb Sauce
Step 6
In a blender, blend cream cheese, cottage cheese, goat cheese, Parmesan, cheddar, miso, sodium citrate (if using), water, black pepper, and herbs until smooth and just pourable. Chill until ready to use (it should firm up for easy rolling).
Scrambled Eggs

In a clean skillet, add a spray of oil and pour in beaten eggs. Scramble over low-medium heat, stirring gently until just set and still moist. Season with salt and pepper. Cool to room temp for easy assembly.
Burrito Assembly & Toasting

Lay tortillas out on a work surface. Spread a spoonful of cheese sauce in a line near the bottom third of each tortilla.
Step 9
Top with a layer of beef crumbles, followed by sautéed mushrooms, wilted spinach, and a scoop of scrambled eggs. Add an extra drizzle of cheese sauce if desired.

Fold in sides, then roll up tightly from the filling side to form a burrito.

Heat a nonstick skillet over medium-high. Toast burritos seam side down first, pressing gently, until golden and crisp on both sides (2–3 minutes per side). Alternatively, air fry at 200°C (390°F) for 6–8 minutes for a crispier exterior.

Cool fully on a rack if storing. Once cool, wrap each burrito tightly in foil or parchment and transfer to freezer-safe bags.
Freezing & Reheating

Freeze burritos up to 2 months. Reheat from frozen in an air fryer at 180°C (360°F) for 8–10 minutes, in a toaster oven for 12–14 minutes, or microwave (unwrapped) for 2–3 minutes.
