Instructions

Step 1
First, combine 2 and a half cups of water and the steel cut oats in an 8-cup microwave-safe bowl. Microwave on medium for 18 minutes, then let stand for 10 minutes. In the bowl of a stand mixer (or large bowl) combine the remaining water with the oat mixture. Make sure the mixture is not too warmwarm, about 105-110 degrees so you don't kill the yeast. Add the yeast and let it get foamy, about 5 minutes. Mix in the 2 tbps. honey, flour, and salt. Knead with the dough hook for 15-20 minutes until elastic. Let the dough rise for 1.5-2 hours or until it doubles in size.
Step 2
Next, divide the dough into 15 pieces (about 4 ounces each). Shape them into balls, let them rest for 5 minutes, then shape them into bagels. Let them proof in the fridge for a minimum of 4 hours, up to 24 hours.
Step 3
When you're ready to bake, preheat your oven to 450 degrees. Boil the bagels in water with the remaining honey for 1 minute each, then add your toppings. Bake for 20-25 minutes. Let them cool, slice, and enjoy!
