2 poundLean ground beef

1 packetTaco seasoning
low sugar, or homade

2 cupsLow fat cottage cheese

10 ozcan Tomatoes with green chilies

Green Onions
diced optional

Instructions
Step 1
Brown the meat until cooked thoroughly.
Step 2
While the meat is browning, in a seperate bowl, mix together the cottage cheese, tomatoes w/green chilies and shredded cheese.
Step 3
After meat is browned drained completely. Add the Taco seasoning and a splash of water. Let it simmer on low for a few minutes or add a little unsweetened tomato sauce.
Step 4
Spread the ground meat evenly in an oven safe dish.
Step 5
Spread the cheese mixture evenly over the meat.
Step 6
Sprinkle more shreeded cheese on top then green onions and place in the oven for for 20 minutes or until bubbly.
Step 7
Remove from oven, let set for about 5 minutes and plate.
Step 8
Top with desired toppings!
