Instructions

Step 1
Dice the onion and red pepper
Step 2
Fry the diced veggies in the olive oil for 5min then add the corn and fry for 2 more minutes
Step 3
Transfer fried veggies to a food processor with 250ml water, and blend until smooth
Step 4
Add back into the pot and add the other 500ml of water, along with the stock cubes
Step 5
Bring to a boil and simmer for 5min
Step 6
Season to taste with salt and pepper, and add the yogurt right before serving. If reheating, do not bring to boil
