Ingredients

3 cupsall-purpose flour

1 tspsalt

1 tspbaking powder

1 tspbaking soda

1 Tbspground cinnamon

1 tspground ginger

½ tspground nutmeg

¼ tspground cloves
Optional, or allspice for warmth

3eggs
large

½ cupvegetable oil

½ cupapplesauce
for moisture + reduced fat

2 cupssugar
can use 1 1/2 cups white sugar + 1/2 cup brown sugar for deeper flavor

1 Tbspvanilla extract

2 cupszucchini
shredded, don’t squeeze dry

1orange
Zest of, or 1 lemon, optional but brightens the flavor
Instructions
Step 1
1. Preheat oven to 325°F (163°C).
Step 2
Lightly grease or line your mini loaf pans (approx. 7 x 3 inches or smaller).

2. Mix dry ingredients:

In a large bowl, whisk together flour, salt, baking powder, baking soda, cinnamon, ginger, nutmeg, and optional cloves or allspice.

3. Mix wet ingredients:

In another bowl, beat eggs with oil, applesauce, both sugars, vanilla extract, and citrus zest until smooth.

4. Combine mixtures:

Gradually add the dry mixture into the wet mixture and stir just until blended. Fold in the shredded zucchini.

5. Fill pans & bake:

Divide batter evenly among mini loaf pans—fill about ⅔ full.

Bake for 35–45 minutes, or until a toothpick comes out clean. (Smaller pans may bake faster—start checking at 30 minutes.)

6. Cool & freeze:

Let cool in pans 10 minutes, then transfer to a wire rack. Once completely cool, wrap in plastic wrap and freeze if desired.
