Ingredients
2 servings
1zucchini
large, halved lengthwise
kosher salt
pepper
to taste
5 ozcanned tuna in water
drained
1stalk celery
finely chopped
0.5red onion
small, diced
¼ cupplain Greek yogurt
triple zero or chobani zero sugar
2 tablespoonsdill
chopped
1 teaspoondijon mustard
1 tablespoonfresh lemon juice
1jalapeño
thinly sliced or chopped
¼ cupshredded fat free cheddar cheese
Instructions
Step 1
Preheat oven to 350°F and line a baking tray with parchment paper.
Step 2
Cut zucchini in half lengthwise and scoop out the insides (save for another use).
Step 3
Place zucchini halves on the tray, spray with cooking oil, and season with salt and pepper. Bake for 12–15 minutes until just tender.
Step 4
In a bowl, mix tuna, celery, red onion, Greek yogurt, dill, Dijon, lemon juice, and jalapeño. Season with salt and pepper to taste.
Step 5
Stuff the baked zucchini halves with the tuna mixture and sprinkle with cheddar.
Step 6
Return to oven and bake for 10 minutes, until cheese is melted.
Step 7
Top with any optional garnishes and serve.
