Instructions
Step 1
Stir in the wine, tomatoes, chilli (if using), and bay leaves with plenty of freshly ground black pepper.
Step 2
Bring to a simmer over gentle heat, stirring occasionally.
Step 3
Remove the lid and cook for a further 20 minutes until the mince is tender and the sauce is thick.
Step 4
Mix the cornflour with cold water to thicken the sauce and cook for another 1-2 minutes.
Step 5
Adjust the seasoning to taste and serve with pasta or shredded white vegetables.
Step 6
Add a few shavings of Parmesan cheese before serving.
