Instructions
Step 1
Spray a large, heavy-based, non-stick casserole pan or saucepan with low-calorie cooking spray and place over medium heat.
Step 2
Add the peppers, cover, and cook for 5 minutes or until they're beginning to soften, stirring occasionally.
Step 3
Sprinkle over the Cajun seasoning and stir for 1 minute.
Step 4
Stir in the rice, tomatoes, and 700ml boiling water. Bring to the boil over a high heat, cover,reduce the heat to very low and cook for 20 mins
